Ingredients

  • 10 oz orzo
  • 3 carrots
  • 1/2 yellow onion
  • 4 tbsps olive oil
  • 2.5 cups milk (any type, even natural plant-based)
  • 1.7 cups water
  • 1 broth cube (vegetable)
  • 1 tsp fine salt
  • 2 tbsps butter
  • 4 tbsps grated Parmesan cheese

Steps

  • 1 – Place the 3 washed and chopped carrots into the Monsieur Cuisine basket, add the half onion chopped into pieces. If you have the reducer, insert it, so the mince doesn’t spread all over the bowl. Select Turbo function and give 2 pulses of two seconds each. Use a spatula to push the mince to the bottom for sautéing.

    2 – Pour the olive oil into the bowl and select the Sauté program for 4 minutes without the measuring cup.

    3 – Add water + the broth cube + salt and select the custom cooking program: 212°F – 10 minutes – Speed 1.

    4 – Add the milk and select the custom cooking program: 212°F – 8 minutes – Speed 1.

    5 – Open the bowl lid and use a spatula to stir the mixture at the bottom, add the Orzo pasta, stir it, then select the custom cooking program again and start cooking the soup for the time indicated on the package minus 1 minute. My Barilla Orzo indicates 10 minutes: 212°F – 9 minutes – Speed 1 – blades counterclockwise reverse to the left.

    6 – At the end of cooking, taste and adjust salt if necessary, add the butter and grated Parmesan cheese (optionally also a parsley mince) and cream the soup. Set custom cooking: 0°F – 1 minute – Speed 1 – blades counterclockwise reverse to the left.
