Making creamy homemade yogurt with the Monsieur Cuisine Smart is a simple and rewarding experience. It starts by heating the milk directly in the bowl, bringing it to a high temperature of 185°F before proceeding to fermentation. This preliminary step eliminates unwanted bacteria, even if the milk is pasteurized, neutralizing any microorganisms that could interfere with the cultures and improves the yogurt’s texture.

Then the right temperature is reached to activate the cultures without compromising them, creating the perfect environment for fermentation. At this point, yogurt (or lactic cultures) is added, gently stirring to distribute the beneficial bacteria well.

Then comes the moment of magic: the fermentation program is set, which will maintain a constant and controlled temperature for several hours, slowly turning the milk into a thick, velvety, and naturally sweet yogurt.

Ingredients

  • 1 liter of pasteurized milk (whole, semi-skimmed, or long-life)
  • 125 g yogurt (or 1 packet of lactic cultures)

Steps

  • 1 – Place 1 liter of pasteurized milk in the bowl

    2 – Set Custom Cooking: boil the milk at 185°F for 20 minutes at Speed 2 – blades to the right

    3 – Let the milk cool until it reaches a temperature of 104-113°F

    4 – Add 125 g of Greek yogurt or 1 packet of lactic cultures into the bowl

    5 – Set Custom Cooking: temperature 0 for 3 minutes at Speed 3 – blades to the left

    6 – Set Fermentation: program at 104°F for 12 hours, with the measuring cup closed on the bowl.

    7 – At the end of the Fermentation program, open the lid and transfer the yogurt to a container or individual jars, removing it carefully.

    8 – Put the freshly made yogurt in the refrigerator for at least 2-4 hours before consuming it.

  • The yogurt can be stored in the refrigerator for one week, and you can serve it plain or with fruits and cereals.
