FRESH HERB MIX in a Jar

The fresh herb mix in a jar from this recipe, also known as August Flowers, is an excellent seasoning to keep on hand for cooking or marinating any dish based on meat, fish, eggs, or potatoes.

The dose is for a 500-gram jar that keeps in the refrigerator for a long time and you won’t be able to do without it, just like the ready soffritto in a jar.

Ingredients

  • 200 g white onion
  • 100 g carrots
  • 25 g basil (fresh)
  • 25 g rosemary (fresh)
  • 25 g parsley (fresh)
  • 10 g fresh garlic
  • 40 g fine salt
  • 100 g seed oil (sunflower, corn, or olive oil)

Steps

  • The steps are very simple. Put the fresh basil leaves, fresh rosemary needles, and fresh parsley in a food processor and finely chop the herbs.

    At this point, add the onions, garlic, and cleaned and chopped carrots, add the salt and seed oil, which can be either seed or olive oil. Chop everything again until the herb mix becomes a fine and homogeneous blend.

    Transfer to a clean and sterilized 500-gram capacity glass jar, and pour a thin layer of oil on top, then close the lid and store in the refrigerator until use.

    Great for marinating white or red meats, or for flavoring braises, roasts, or meatloaves. When you add it to your recipes, keep in mind that the fresh herb mix contains a modest amount of salt.
