Golden fried red mullets are a fish main course not to be underestimated, not only because they are economical, but for their white and lean meat and because they are rich in nutrients. Good as sardines in the potato and fresh sardine pie.
The recipe for golden fried red mullets is simple and quick, for 4 people you might need 12 medium-sized red mullets, some flour, frying oil.
After selecting the fish, which must be very fresh, wash it under running water and with a pair of scissors cut all the fins on its back, under the belly, and under the head. With the blade of a sharp little knife, scale them from the tail to the head and eviscerate the innards. Wash the red mullets again and dry them by patting with a sheet of paper towel.
In a plastic bag put 2 tablespoons of flour, 2 tablespoons of durum wheat semolina, 1 teaspoon of fine salt and a pinch of paprika (optional) and shake the bag to mix the powders.
Put 2-3 red mullets at a time into the bag, close it with your hands and shake it gently with the red mullets inside. In this way, you will obtain a homogeneous and thin coating, without waste and excess.
In the meantime, heat the oil in a pan, I prefer peanut oil, and when it reaches the right temperature fry the floured red mullets a few at a time.
Let them cook in the oil for 3-4 minutes and when they look crispy and golden, drain them. Serve the fried red mullets with lemon slices and a sprinkle of sesame seeds.
