Ingredients
- 8.8 oz organic sesame seeds (hulled)
- 1/2 teaspoon fine salt
- 2 oz light seed oil (sunflower or sesame oil)
Steps
1. Toast the sesame seeds
Put the sesame seeds in the mixing bowl and select the Custom Cooking program: set it to 194°F for 8 minutes at speed 2. They should become golden without burning: this step enhances their aroma. If necessary, increase the roasting time by another 2 minutes.
2. Blend with the Monsieur Cuisine
Let the toasted seeds cool for 10 minutes.
If you have it, insert the reducer into the Monsieur Cuisine mixing bowl and blend at speed 8 for 1 minute at zero temperature. Push the sesame seeds to the bottom of the mixing bowl and repeat the operation 2 more times.
Now add the salt and blend at speed 8 while gradually adding the oil, continuing to blend for 1-2 minutes until you get a smooth and velvety paste.
If you prefer it more fluid, slightly increase the amount of oil.
3. Storage
Transfer the tahini to a sterilized glass jar, close it well, and store it in the refrigerator. It stays fresh for about 3-4 weeks.
