The legume and vegetable veggie burgers are the best I have made and eaten with real enjoyment. These burgers are so good that everyone in the family devours them—vegetarians, vegans and omnivores alike. These exquisite legume and vegetable burgers are made with white beans (cannellini), which can also be replaced with other legumes if you prefer. The potatoes and vegetables remain as in the recipe, together with plenty of aromatics to make everyone at the table happy, whatever their dietary philosophy!!

Ingredients

  • 1 1/2 cups white beans (cannellini) (or chickpeas)
  • 1 zucchini (large)
  • 1 potato
  • 6 tbsp chickpea flour
  • 1 onion
  • 2 tsp apple cider vinegar
  • 1 1/2 tsp turmeric powder
  • 4 tbsp breadcrumbs (toasted in a skillet)
  • 3 tbsp walnuts (roughly chopped)
  • to taste basil (fresh)
  • to taste salt and pepper
  • to taste olive oil

Preparation

  • 1 – Grate the zucchini, the potato and the onion and place the vegetables in a nonstick skillet with a drizzle of olive oil. Sauté the vegetables for a few minutes until cooked.

    2 – Meanwhile, coarsely chop the already-cooked beans.

    3 – Also chop the walnut halves coarsely, not finely.

    4 – Toast the breadcrumbs in a nonstick skillet, without burning them—just until they are lightly golden.

    5 – At this point combine all the preparations in a bowl. Add the herbs, spices and mix the dough well. If needed, adjust the flavor with salt. Place the mixture in the refrigerator and let it rest for 15 minutes.

    6 – After the resting time, take the mixture and shape the burgers, which should not be fried but cooked in a nonstick skillet with very little olive oil.

    7 – Cook the legume and vegetable burgers over low heat with a lid on. After a few minutes, flip them, and when they are nicely browned serve with sauces of your choice.
