Ingredients
- 1 cup milk
- 2 tbsps cornstarch (Maizena)
- 3 oz pecorino (grated)
- 1 tbsp butter
- to taste salt and ground black pepper
Steps
Pour the milk into a non-stick saucepan, add the cornstarch and dissolve it to remove the small lumps.
Place the saucepan on low heat and cook the mixture, stirring with a spatula or whisk, until it thickens. This will take about 3-4 minutes.
When the mixture has thickened, remove it from the heat and add a teaspoon of butter, the grated pecorino, and ground black pepper.
Taste and add a pinch of salt if necessary, according to your taste, as pecorino is already quite flavorful.
Return the saucepan to the heat, still on low flame, just to melt the cheese and mix it well.
It keeps in the refrigerator for a few days, stored in a glass container.
