Ingredients
- 7 oz penne rigate
- 7 oz tomato puree
- 1 tbsp tomato paste
- 3.5 oz olive oil
- 1.5 cups water
- 1 clove garlic
- 0.5 oz fresh parsley
- 1 pinch sugar
- to taste dried red chili
- 1/2 teaspoon fine salt (+ 2 pinches)
Steps
1 – Weigh 0.5 oz of fresh parsley in the bowl (if you have the reducer, insert it, it will help you not to spread small quantities in the entire bowl)
2 – Chop the parsley and set it aside: Custom Cooking 32°F – 7 seconds – Speed 7
3 – Weigh 3.5 oz of olive oil in the bowl + add 1 whole clove of garlic + red chili to taste
4 – Sauté without the measuring cup: Sauté 248°F – 5 minutes – then remove the garlic clove
5 – Weigh 7 oz of tomato puree in the bowl + 1 tbsp of tomato paste + add 1 pinch of sugar + 1/2 scant teaspoon of salt + half of the previously chopped parsley.
6 – Cook the tomato with the measuring cup inserted in the bowl: Custom Cooking 212°F – 15 minutes – Speed 1
7 – Add 1.5 cups of water and 1/2 teaspoon of salt and bring to a boil by setting: Custom Cooking 212°F – 10 minutes – Speed 1
8 – Pour 7 oz of penne into the water, with the bowl without a measuring cup cook by setting the time indicated on the pasta package minus 2 minutes: Custom Cooking 212°F – 7 minutes (my pasta cooks in 9 minutes) – Speed 1 – Blades Left Turn
9 – At the end of cooking, pour the other half of the chopped parsley, 2 pinches of salt to taste, mix everything and let it rest for 1 minute before serving.
