PENNE TOMATO AND BASIL with the Monsieur Cuisine Smart

Ingredients

  • 7 oz penne rigate (I used Rummo)
  • 7 oz tomato sauce (I used Mutti)
  • 3.5 oz extra virgin olive oil
  • 1/2 onion
  • 1/2 carrot
  • 1/2 stalk of celery
  • 12 oz water
  • fresh basil (10 leaves)
  • 1 pinch sugar
  • as needed fine salt
  • 0.7 oz grated Parmesan cheese

Steps

  • 1 – Weigh 3.5 oz of olive oil in the bowl + add 1/2 small onion – 1/2 small carrot – 1/2 tender celery stalk (if you have the reducer insert it, it will help you not to spread small quantities throughout the bowl).

    2 – Chop the vegetables: Custom cooking 0°F – 7 seconds – Speed 7

    3 – Sauté the vegetables without the measuring cup: Sauté Program 248°F – 5 minutes

    4 – Remove the reducer if you had it and weigh 7 oz of tomato sauce in the bowl + add 1 pinch of sugar + 1/2 teaspoon of fine salt + 10 fresh basil leaves.

    5 – Cook the tomato with the measuring cup in the bowl: Custom cooking 212°F – 10 minutes – Speed 1

    6 Add 12 oz of water + 1/2 teaspoon of fine salt and bring to a boil setting: Custom cooking 212°F – 10 minutes – Speed 1

    7 At this point, pour 7 oz of penne into the water, and with the bowl without the measuring cup cook by setting the time indicated on the pasta package minus 2 minutes: Custom cooking 212°F – 8 minutes (my pasta cooks in 11 minutes) – Speed 1 – Blade turns to Left (counterclockwise)

    8 – After cooking, add 0.7 oz of grated Parmesan cheese in the bowl, adjust salt if necessary, and mix without the measuring cup: Custom cooking 212°F – 1 minute – Speed 1 Blade turns to Left (counterclockwise).

    9 – Let it rest for 1 minute before serving with more fresh basil garnish and an additional sprinkle of grated Parmesan cheese.
