Ingredients
- 2 piadinas (small flatbreads) (small size)
- 4 tablespoons tomato passata
- 1 mozzarella (about 4 oz (125 g))
- to taste fine salt, olive oil
Steps
Step 1: PREPARE THE BASE
Choose good-quality piadinas. Place the first flatbread in the air fryer basket on a sheet of parchment paper. If the shape is slightly larger, you can trim the edges without problems.
To prevent it from puffing up too much during cooking, lightly prick the surface with a fork.👉 This last step helps achieve a more even and crispy base.
Step 2: TOMATO, DON’T OVERDO IT
Spread 2 tablespoons of tomato passata in a thin layer, distributing it well but without overdoing it. The piadina doesn’t absorb like a traditional dough, so it’s better to keep it light.
Season with a pinch of fine salt, a drizzle of extra virgin olive oil and the spices you prefer: oregano, dried basil or a pizza herb mix.Step 3: MOZZARELLA
Add well-drained mozzarella cut into cubes or strips on the first flatbread. This is the secret to avoiding a “watery pizza” effect. Finish with a drizzle of olive oil.
Step 4: SECOND LAYER AND TOPPINGS
Place the second flatbread on top of the base, spread another 2 tablespoons of tomato passata in a thin layer, season with a pinch of fine salt, a drizzle of extra virgin olive oil and the other half of the mozzarella.
