Ingredients
- 1 3/5 cups all-purpose flour
- 3/4 cups semolina flour
- 7 oz water (room temperature "purified"))
- 1 tsp active dry yeast
- 1 tsp sugar
- 2 tsp fine salt
- 2 tbsps olive oil
Steps
1 – Set the scale function and pour into the bowl one by one: 7 oz of room temperature water + 1 tsp of sugar + 1 tsp of active dry yeast.
2 – Dissolve the yeast: Select the custom cooking program and set: temperature 99°F – 2 minutes – Speed 3
3 – Set the scale function and add to the bowl: 1 3/5 cups of all-purpose flour + 3/4 cups of semolina flour + 2 tbsps of olive oil + 2 tsps of fine salt.
4 – Knead: Select the kneading program, choose compact dough and set 2 minutes.
5 – To remove the dough from the bowl I recommend oiling your hands with some oil and pouring a little over the dough mass, the dough will detach easily to be placed in a bowl to rise until it doubles.
