Potato salad is a dish I remember from my childhood, my grandmother always made it, and as I grew up I prepared it for my children and they too fell head over heels for this delicious dish.
Besides being easy to make, with potatoes, eggs, onions and mayonnaise that are always in the house, potato salad is a quick recipe that becomes a one-dish lifesaver for dinner or lunch.
Try it in summer or winter with the fake mayonnaise or with yogurt mayonnaise and serve it even the next day; it keeps for several days in the refrigerator and the longer it sits the better it becomes.

Ingredients
- 3 potatoes
- 3 white onions
- eggs (3)
- to taste olive oil, salt, vinegar
- to taste mayonnaise
Preparation
There is nothing easier than putting all the ingredients in a pot of water: the potatoes with their skins on, the whole onions also with their skins on, and the raw eggs.
Then turn on the heat and boil for 30 minutes, until the potatoes and onions are cooked through.
When the potatoes and onions are cooked, drain and let cool.
Peel the potatoes and the onions and remove the shells from the hard-boiled eggs.
Dice the potatoes, slice the onions thinly and chop the hard-boiled eggs into small pieces.Put everything in a bowl and season with olive oil, salt, a little vinegar and mayonnaise. Mix the ingredients well and let the dish rest for a few minutes to absorb the flavors before serving.
