READY MIX FOR VEGETABLE BURGERS

The ready mix for vegetable burgers is a versatile powdered blend. I wanted to stop buying those anemic soy cutlets they sell at the supermarket, partly out of laziness and partly for convenience. With the ready mix I have the convenience of always having a blend in the pantry, stored in a jar, to make vegetable cutlets and burgers.

After making the breaded chickpea cutlet and the sea chickpea cutlet, I thought of sharing this ready mix on the blog hoping you like it and that it may be useful for any occasion. The combination of ingredients I prepared can be customized to your tastes by changing or adding other types of flour, legumes and various spices.

Ingredients

  • 5.3 oz soy flour
  • 3.5 oz oat flour (or oat bran)
  • 3.5 oz chickpea flour
  • 1.8 oz rice flour
  • 1.8 oz fine corn flour
  • 2.8 oz instant mashed potato mix (powdered)
  • 1.8 oz potato starch (or cornstarch)
  • 1.1 oz carrot flour (or pea flour)
  • 1.1 oz walnuts (or sunflower seeds)
  • 0.5 oz flax seeds
  • 0.4 oz brewer's yeast flakes (deactivated)
  • 1 tablespoon heaping tablespoon of ground spices: (onion, garlic, parsley, rosemary, chili pepper, sweet paprika, turmeric, ginger, coriander)
  • 1 teaspoon fine salt (to taste)

Preparation

  • 1 – Prepare each ingredient one by one and place them in a large bowl.

    2 – Toast the chickpea flour in a nonstick pan for a few minutes.

    3 – Chop the walnuts and grind the flax seeds. A coffee grinder for the flax seeds is ideal.

    4 – Mix everything together: flours, seeds and spices, and store the mix in a glass jar.

    5 – To make one generous burger of about 3.5 oz you need 4 tablespoons of the ready mix and warm water as needed to obtain a soft, malleable dough. Let it rest for 15 minutes.

    6 – After resting time, shape the burger and cook it in a pan with a drizzle of olive oil. You can also fry them after breading with a chickpea batter, or simply bake them in the oven.
