The rice cookies with pineapple and crunchy almonds are gluten-free and can be baked in the traditional oven or in the air fryer. Very good and easy to prepare, for those who are intolerant to gluten flours and for the whole family.
Try to make also the rice cookies with cranberries, the procedure is the same even though some ingredients differ, and you will have excellent cookies to serve for breakfast or as a snack.

Ingredients
- 1 1/2 cups rice flour (fine, soft)
- 1/2 cup potato starch
- 1/4 cup cornstarch
- 1/3 cup sugar
- 1/3 cup sunflower oil
- 3 1/2 tbsp milk (dairy or plant-based)
- 1 tsp baking powder
- 3/4 tsp xanthan gum (or guar gum)
- 1 egg (medium)
- 1 pinch fine salt
- 1 packet vanillin (powdered)
- 1/3 cup dried pineapple
- 1/4 cup crunchy almonds
- as needed powdered sugar
Steps
In a bowl, put all the dry ingredients: rice flour, potato starch, cornstarch, sugar, the pinch of salt, powdered vanillin, baking powder, and xanthan gum (or guar gum).
Mix the powders well together, then add the liquid ingredients: oil, milk, the whole egg, and the dried pineapple cut into small pieces. Then, with a fork, mix the batter well to combine the ingredients.
Knead the ingredients inside the bowl until you get a smooth and compact dough that won’t need to be handled for a long time.
At this point, cover it and let it rest for 15-30 minutes.
After the resting time, take a part of the dough and place it between two sheets of parchment paper and roll it out with a rolling pin to the thickness you want, then use a cookie cutter to cut out the rice cookies with pineapple.
In a small bowl, place the crunchy almonds and press the rice cookies into them to adhere to the surface.
You can find crunchy almonds already prepared in the dessert section of the supermarket.
Place the cookies on the oven tray or in the air fryer basket, where you have placed a sheet of parchment paper or a non-stick mat to prevent them from sticking.
Bake the cookies at 340°F for 8-10 minutes, depending on the thickness and size, both in the traditional oven and in the air fryer.
Let them cool before serving them, sprinkle them with a dusting of powdered sugar.
