RUSTIC APPLE AND STRAWBERRY TART with Monsieur Cuisine Smart and Air Fryer

This rustic apple and strawberry tart is made like this: a few ingredients, simple steps and the wish to prepare something good without complications, helped by a perfect combo.
The shortcrust comes together in no time with the Monsieur Cuisine Smart, while the jams remain the protagonists, separated but close, each with its own character. The air fryer does the rest: even cooking, an irresistible aroma and that golden color that signals a celebration.
It’s the perfect tart to slice once it is fully cool, to enjoy slowly—perhaps with a coffee or a cup of tea. A sincere, rustic dessert that doesn’t need to be perfect to be special.

Ingredients

  • 2 cups 00 flour (all-purpose) (about 250 g / 8.8 oz)
  • 9 tbsp butter (cold, cut into cubes (about 125 g / 4.4 oz))
  • 1/2 cup granulated sugar (about 100 g / 3.5 oz)
  • 1 egg (medium)
  • pinch salt
  • to taste lemon zest (or vanilla, if desired)
  • 1/2 cup apple jam (about 150 g / 5.3 oz)
  • 1/2 cup strawberry jam (about 140 g / 4.9 oz)

Steps

  • 1️⃣ Sabbiatura (cutting in)
    Put into the bowl:
    – 2 cups flour
    – 9 tbsp cold butter, cut into cubes
    👉 Select Custom Cooking: Speed 6 – for 15 seconds

    2️⃣ Dough
    Add to the bowl:
    – 1/2 cup sugar
    – 1 medium whole egg
    – 1 pinch fine salt
    Choose the aroma you prefer: grated lemon zest or vanilla
    👉 Select Custom Cooking: Speed 4 – 15 seconds
    The dough should just come together, it should not become smooth like bread dough.

    3️⃣ Rest
    Turn the dough out of the bowl onto your work surface.
    Form a compact disc.
    Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.

  • 4️⃣ Base
    – Take the dough from the fridge and reserve 1/4 of the dough to the side.
    – Roll out the remaining dough to a thickness of about 1/8–3/16 inch (approximately 3–4 mm) and line an 8×8 in square pan (after greasing with butter and dusting with flour).
    – Trim the excess dough from the edges and prick the base with a fork.

    5️⃣ Filling
    – Spread the apple jam on one side.
    – Spread the strawberry jam on the other side, keeping the two areas separate.
    Level without mixing the two jams.

    6️⃣ Rustic decoration
    – Roll out the dough you set aside and cut rustic, uneven strips.
    – Lay them over the jam up to the edges and press lightly so they adhere.

  • Temperature and times:
    320°F (better lower and longer so the jam doesn’t boil)
    – Time 33–35 minutes

    Procedure:
    – Preheat the air fryer for 3 minutes at 320°F
    – Place the tart in the basket or on the air fryer rack
    – Bake the tart for the first 20 minutes
    Check:
    – If the top already looks dark → lightly cover with a sheet of aluminum foil
    Continue baking for another 13–15 minutes

    ✔️ Signs the tart is ready
    – The edges are well golden
    – The bottom is baked
    – The jam is set

    Cooling
    Leave the tart in the pan for at least 40–45 minutes until it cools completely.
    Slice only when cold, after the strawberry jam has set.

If you want an even more rustic shortcrust:
Replace about 1/3 cup (approx. 50 g) of the all-purpose flour with whole wheat flour.

– or a very small pinch of cinnamon ONLY on the apple jam part.
