SAVORY CHEESE COOKIES

Savory cheese cookies are tasty and crumbly and can be served at any time of the day, perfect with aperitifs, snacks and after-dinner.

These cookies, made with grated Parmigiano Reggiano or Grana Padano, go well with cured meats, mixed cheeses, stuffed olives and much more. Have fun surprising your guests with all the combinations that pair with these savory cheese cookies.

Ingredients

  • 1 3/4 cups 00 flour (all-purpose style)
  • 6 1/2 tablespoons sunflower seed oil
  • 1/2 cup grated Parmigiano Reggiano (or Grana Padano)
  • 1 egg
  • 2 tablespoons water
  • 1 1/2 teaspoon turmeric powder
  • 2 pinches salt
  • 1 teaspoon instant baking powder for savory preparations

Preparation

  • 1 – Put all the ingredients in a bowl, except the oat flakes.

    2 – Work into a compact dough and let it rest for 30 minutes in the refrigerator.

    3 – Preheat the oven. Meanwhile, prepare the cookies and place them on a nonstick baking sheet.

    4 – Take a small portion of dough, form balls, flatten them between your hands and place the cookies on the baking sheet.

    5 – Sprinkle a pinch of oat flakes over the cheese cookies.

    6 – Bake at 356°F for 15–18 minutes until lightly golden.
