Ingredients
- 7 oz small shells
- 5 oz smoked salmon (salmon trimmings are also fine)
- 3.5 oz extra virgin olive oil
- 1 shallot
- 0.35 oz fresh parsley
- 1.75 oz dry white wine
- 3.5 oz heavy cream
- 1/2 teaspoon of fine salt + 2 pinches
- 12 oz cold water
- 1 teaspoon tomato paste
- to taste ground black pepper
Steps
1 – Place 1 chopped shallot in the bowl + 0.35 oz of fresh parsley (if you have the reducer insert it, it will help you not to spread small amounts throughout the bowl).
2 – Chop the vegetables: Custom cooking 32°F – 7 seconds – Speed 7
3 – Add 3.5 oz of olive oil and sauté without the measuring cup: Browning program 248°F – 5 minutes.
4 – Remove the reducer, if you inserted it, and add 5 oz of smoked salmon cut into strips: Custom cooking 212°F – 10 minutes – Speed 1 – Blades turn Left (counter-clockwise).
5 – Add 1.75 oz of dry white wine and let it evaporate without the measuring cup: Custom cooking 212°F – 5 minutes – Speed 1 – Blades turn Left (counter-clockwise).
6 – Add 12 oz of water + 1/2 teaspoon of fine salt + 1 teaspoon of tomato paste and bring to a boil by setting: Custom cooking 212°F – 12 minutes – Speed 1 – Blades turn Left (counter-clockwise)
7 – At this point, pour 7 oz of shells into the water, and cook without the measuring cup, setting the time indicated on the pasta packaging minus 2 minutes: Custom cooking 212°F – 7 minutes (my pasta cooks in 9 minutes) – Speed 1 – Blades turn Left (counter-clockwise).
8 – At the end of cooking, add 3.5 oz of heavy cream + 2 pinches of fine salt + a sprinkle of ground black pepper and mix by setting: Custom cooking 194°F – 1 minute – Speed 1 – Blades turn Left (counter-clockwise).
9 – Let the pasta rest for 1 minute before serving it with all its creaminess and a sprinkle of chopped parsley to taste.
