Ingredients

  • 1/4 cup water (lukewarm)
  • 2 tbsp sugar
  • 1/2 oz fresh yeast
  • 1/3 cup all-purpose flour
  • 2 cups all-purpose flour
  • 1/4 cup soy milk (or other plant-based or non-plant-based milk)
  • 1/4 cup sunflower oil (or corn oil)
  • 2 tbsp sugar
  • 1 packet vanillin
  • 1 pinch fine salt

Preparation

  • Prepare the starter dough by placing the water, sugar, and crumbled fresh yeast in a bowl. Dissolve it and add the flour. Mix the mixture well with a whisk, which will be semi-liquid, then cover it and let it rise for 20/30 minutes, until it doubles.

  • After the resting time, add the room temperature milk to the starter dough, oil, sugar, and vanillin. Mix the mixture, then add the sifted flour, a pinch of salt, and knead the dough on the floured work surface. When you have obtained a smooth and homogeneous dough, place it in a covered bowl and let it rise until it doubles.

    Meanwhile, prepare the filling by peeling the apples. Cut them into small cubes and put them in a pan with the lemon and sugar. Cook them for 7 minutes, until they become slightly golden. Turn off the heat and let them cool.

  • Take the risen dough and divide it into 6 equal parts. While preparing the brioches, keep the dough balls covered, so they don’t dry out on the surface. Roll out a dough ball with a rolling pin, then with a pastry cutter of 4 inches in diameter, cut out 2 equal disks.

  • On one dough disk, place 2 teaspoons of apples and brush the edge with water. On the other disk, make cuts in the center with a sharp knife, 8-9 cuts will be enough. Overlap the disk with cuts on the disk with apples, seal the edges, and place the ready brioche on a baking tray.

  • Continue to form all the brioches and then let them rest covered with a cotton cloth for 30 minutes. Preheat the oven and bake the apple heart brioches at 356°F (fan oven) or 374°F (static oven) for 15 minutes, on the lower oven rack.

  • After fifteen minutes, they will be cooked and golden, turn off the oven, take out the tray, and before the brioches cool, sprinkle them with powdered sugar.

    With these doses, you will get 7/8 very soft and tasty brioches.
