Ingredients
- 1.6 cups all-purpose flour
- 1.1 cups oat flour
- 3.5 oz honey
- 4.2 tbsp butter
- 2 eggs (medium)
- 1 apple (large)
- 2 pinches salt
- 1 lemon (juice and grated zest)
- 1 pack vanillin
- 2 tsp baking powder
- to taste powdered sugar
Steps
Peel the apple, cut it into wedges, and then into small cubes.
Squeeze the juice from the lemon and pour it over the apple cubes, leaving them to marinate for a few minutes.
Meanwhile, place the sifted flours, both wheat and oat, in a bowl. Add the beaten eggs, honey, softened butter, vanillin, salt, and baking powder. Mix with a spatula and then add the apples. Thoroughly mix the dough and compact it directly in the bowl.
Take a small amount of dough with a teaspoon and form a ball.
Shape the cookies and place them on the baking tray lined with a sheet of non-stick parchment paper. This batch will make 20 cookies, although it will depend on the size of the balls.
Preheat the oven to 356 degrees Fahrenheit, and once hot, bake the cookies for 15 minutes.
Once baked, slightly golden, remove them from the oven and let them cool.
Finally, before serving, sprinkle the cookies generously with powdered sugar.
