STEAMED EGGS in Cups

Steamed eggs in cups are a fun alternative for cooking eggs. We can make them hard-boiled or soft-boiled, plain or with the addition of ingredients like crispy smoked bacon, cooked ham, or a sprinkle of truffle.

To cook steamed eggs, you need a steamer. In my case, I used an electric one whereI prepare white rice, from Oster, but a bamboo steamer will work fine too. Single-serving silicone cups are essential because they simplify the extraction of the eggs. Just be careful not to add too many liquid or semi-liquid ingredients, or the shape will not be uniform. Decide whether to place them on top of the eggs or below; on top (as seen in the photo), the result will be less uniform, while below, the egg shape will be well-defined.

Steps

  • To make steamed eggs in cups, first, prepare the steamer, which can be electric or a bamboo one that rests on the pot of water. Prepare small silicone cups with a diameter of 2.75 inches, brushing them with oil before pouring in the eggs.

  • 1 Simple version: Brush the cups with oil and then pour the whole eggs, yolk and white, into the cups. Leave them plain or add crispy smoked bacon, grated cooked ham, or truffle on top, and a pinch of salt and pepper to taste.

  • 2 Version with condiments: Brush the cups with oil and place half a teaspoon of crispy smoked bacon, grated cooked ham, or truffle at the bottom, then pour in the whole eggs, yolk and white together, and a pinch of salt and pepper to taste.

  • Cover the electric steamer or bamboo steamer and let the eggs steam for about 15-20 minutes.

  • Regarding cooking, you can decide to make them hard-boiled or soft-boiled by checking the cooking of the whites and yolks. The times may vary depending on the steamer you use.

    Let them cool slightly before removing them from the cup, gently, without breaking them, detach the edges, and place the steamed eggs on the plate.
