  • Difficulty: Very Easy
  • Cost: Cheap
  • Rest time: 1 Hour
  • Preparation time: 1 Hour
  • Portions: 10/12 slices
  • Cooking methods: Oven
  • Cuisine: Italian
  • Seasonality: Fall, Winter, and Spring

Ingredients

  • 1 1/2 cups All-purpose flour
  • 3/4 cup Butter (diced)
  • 1/2 cup Sugar
  • 1 Egg yolk
  • 1 Whole egg
  • to taste Liquor
  • to taste Lemon zest (grated)
  • 1 pinch Salt
  • 4 Golden apples
  • to taste Sugar (for garnish)

Preparation

  • Let’s prepare the shortcrust pastry. In a large bowl, put the sifted flour, salt, sugar, cold butter in small pieces, a teaspoon of liquor (to taste), the grated lemon zest. Using a spatula, start combining these ingredients.
Finally, add the whole egg and the yolk, and with the spatula, knead all the ingredients into a dough. The spatula will prevent contact with hands; this way, the butter will not warm up. It doesn’t matter if the butter pieces are still visible and not fully mixed with the other ingredients.
Flatten the dough, as in the photo, place it on parchment paper, wrap it well, and put it in the lowest part of the fridge for at least an hour.
Meanwhile, peel four large apples (you can use Golden, Fuji, etc.) and cut them into thin slices or cubes, as convenient. You can sprinkle them with a little orange juice to prevent excessive oxidation.
Take out the shortcrust pastry, leaving it on parchment paper. With the help of a little flour, roll it out with a rolling pin to a thickness of about 1/5 inch. Place the pastry in the tart pan (using the parchment paper to lift it), trim the edges, fill it with apples distributing them evenly, and finish with a light sprinkle of granulated sugar.
Bake the apple tart in the middle of the oven, preheated to 390°F, for about 25 minutes. Once ready, remove from the oven, let it cool, and enjoy.
If your oven cooks both above and below simultaneously, cover the top of the tart with parchment paper until the last 10 minutes of baking.
