Avocado Dessert Cream

Craving a delicious, easy, no-bake, and low-effort treat? I propose avocado dessert cream, soft, velvety, delicious. This is a very, very easy and quick avocado cream that contains no eggs or gluten. It is perfect for accompanying Sunday’s end of meal or as a dessert to offer our guests. Avocado dessert cream can be prepared either at the moment or in advance and can be served at room temperature or chilled from the fridge.

Ingredients

  • 1 avocado
  • 3/4 cup fresh liquid heavy cream not sweetened (also lactose-free)
  • 6 oz ricotta or cream cheese or Greek yogurt (also lactose-free)
  • 2 tbsp powdered sugar (also gluten-free)
  • 1 lemon and 1 orange

Steps

The cream, ricotta (or cream cheese), and avocado must be chilled from the fridge.

For this recipe, we can use soft or creamy textured cheeses like ricotta, mascarpone, cream cheese, or Greek yogurt, as our delicious dessert also has a soft consistency and is not suitable as a filling or decoration.

Wash the avocado, dry it, and cut its skin all around.

Twist the two halves of the avocado in opposite directions and separate them from the pit.

Using a spoon, scoop out all the pulp. In my case, the total pulp weighed 182 grams (out of a total weight of 250 grams, as stated on the purchase label).

Transfer the avocado pulp to a small bowl, add ricotta, the very finely grated zest of an orange and a lemon (and any other spices you like), and mash the ingredients with a fork until smooth and lump-free.

Start whipping the fresh cream; as soon as it begins to thicken, add the avocado mixture, powdered sugar, and continue whipping for no more than a minute, to avoid the cream curdling and becoming grainy.

Taste to check sweetness and add a bit more powdered sugar if necessary, incorporating it gently with a steel whisk, moving from bottom to top.

The avocado dessert cream is ready. We can serve it immediately, or further personalize it with some liquor (no more than a teaspoon, otherwise the cream would become too fluid), chocolate chips, powdered coffee, crumbled amaretti (which should be added only when serving the dessert, to prevent them from becoming soggy), and so on.

We can also store it in the fridge, in a well-closed container, until serving.
