Avocado Dessert Cream

Craving a delicious, easy, no-cook dessert that requires little effort? I propose the avocado dessert cream, soft, velvety, delicious. It is a very easy and quick avocado cream that contains no eggs or gluten. It’s perfect for accompanying Sunday meals or as a dessert to offer to our guests. The avocado dessert cream can be prepared either at the moment or in advance and can be served at room temperature or cold from the fridge.

Ingredients

  • 1 avocado
  • 3/4 cup fresh liquid cream not sweetened (also lactose-free)
  • 6.2 oz ricotta or spreadable cheese or Greek yogurt (also lactose-free)
  • 2 tablespoons powdered sugar (also gluten-free)
  • 1 lemon and 1 orange

Steps

The cream, ricotta (or spreadable cheese) and avocado should be cold from the fridge.

For this recipe, we can use soft or creamy cheeses like ricotta, mascarpone, spreadable cheese, or Greek yogurt, as our delicious dessert also has a soft texture and is not suitable as a filling or decoration.

Wash the avocado, dry it and cut the peel all around.

Twist the two halves of the avocado in opposite directions and separate them from the pit.

Using a spoon, scoop out all the pulp. In my case, the total weight of the pulp was 6.4 oz (out of a total weight of 8.8 oz, as reported on the purchase label).

Transfer the avocado pulp into a small bowl, add the ricotta, the finely grated zest of one orange and one lemon (and any other spices to taste) and mash the ingredients with a fork until you have a smooth, lump-free puree.

Start whipping the fresh cream; as soon as it begins to thicken, add the avocado mixture, powdered sugar and continue whipping for no more than a minute to avoid the cream curdling, i.e., becoming grainy.

Taste to check the sweetness and add a little more powdered sugar if necessary, gently incorporating it with a steel whisk, moving from bottom to top.

The avocado dessert cream is ready. We can serve it immediately or further personalize it with some liquor (no more than a teaspoon, otherwise the cream would become too fluid), chocolate chips, ground coffee, crumbled amaretti (which should be added only when serving the dessert, to avoid them becoming soggy) and so on.

We can also store it in the fridge, in a well-sealed container, until the time of serving.
