Baked Mackerel Burger without Eggs

The baked mackerel burgers without eggs are very easy, substantial, and can be prepared either as a main course or as a delicious single dish. Mackerels, besides being economical and easy to find, are also good for health. It’s the perfect recipe to make fish enjoyable even for children, who usually do not like the smell or taste. We can also fry our burgers, which will obviously make this tasty recipe less light.

Ingredients

  • 2 mackerels
  • as needed Chives
  • as needed Lemon zest
  • 1 Spring onions
  • as needed Fine salt
  • 1 tbsp Extra virgin olive oil
  • as needed Pepper
  • 1 Boiled potato
  • as needed Breadcrumbs (also gluten-free)

Preparation

  • Wash a medium potato. Place it, unpeeled, in a small pot with cold water and let it cook until tender. Drain it, let it cool for a few minutes, then peel it and mash it in a potato masher.

    Gut the mackerels and rinse them under running water.

    If fresh mackerels are not available, we can use those in water or oil after draining them very well.

    Bring some lemon-scented water to a boil. As soon as it boils, immerse the mackerels, turn off the heat, and let the heat of the water cook the fish for about 10 minutes. This way, the flesh will not flake, and we can bone them perfectly and easily.
    Check that the mackerel flesh is perfectly cooked, then remove the heads, tails, bones, and make fillets.
    Place the fillets in a blender with chopped chives, chopped onion, salt, pepper, oil, a little more grated lemon peel, and blend until you get a more or less coarse puree (depending on your taste).
    Transfer the obtained mixture into a bowl and add half of the mashed potato.

    Mix with your hands or a fork to incorporate the mashed potatoes evenly. As you mix, add a little more mashed potatoes until you get a dense, soft mixture that is easy to shape.

    Do not blend the potatoes with the mixture, as the starch released from them would make the burger dough sticky and gummy.
    Using your hands, take an amount just larger than a ping pong ball, flatten it, and give it a thickness of about a finger. Coat each burger in plenty of breadcrumbs and place it on the baking tray with parchment paper. We can bake our burgers immediately, or let them firm up and rest in the fridge (well covered) for a couple of hours.
    Bake them at medium height, in a pre-heated oven, for about 12/15 minutes at 392°F. Remove from the oven and let them cool slightly. We can enjoy our delicious baked mackerel burgers without eggs in a bun, with ketchup and mayonnaise, or accompanied by a delicious green salad.
