Ingredients
- 2.2 lbs yellow-fleshed potatoes
- to taste extra virgin olive oil
- to taste spice mix (rosemary, sage, thyme)
- 1/4 cup dry white wine
- to taste fine salt
- to taste ground black pepper
Steps
1) Preheat the oven to the maximum temperature.
2) Wash the potatoes with the skin. Peel them, cut them into wedges, and place them in a large baking dish.
3) Wash and chop the spices very finely; with half of the mix, massage the potato wedges to season them well.
4) Season with oil, salt, and pepper to taste, drizzle with wine, massage the wedges well again, ensuring that all the aromas and seasonings are distributed evenly.
It is important that the wedges are not overlapping to achieve even seasoning and cooking.
5) Sprinkle the potatoes with the remaining half of the spice mix and bake the dish on the lowest rack of the oven for about 25/30 minutes (check occasionally, as cooking times vary from oven to oven). During cooking, the wedges should not be turned.
