Baked Sea Bream with Mandarin Sauce

Citrus fruits can be used in the kitchen to prepare both sweet and savory recipes, as in this case. Baked sea bream with mandarin sauce is a refined and light dish, with a delicate flavor and delightful aroma. It is a very easy dish to prepare, eye-catching, perfect for special occasion lunches. The accompanying sauce, a vinaigrette different from the usual, in which vinegar or lemon has been replaced by fresh mandarin juice, can also be used with fresh or smoked salmon, mullet, sea bass, etc… Baked sea bream with mandarin sauce can be served as an appetizer, by reducing portion sizes, or as a main course.

Ingredients

  • 1 kg fresh sea bream
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons mandarin juice
  • to taste fine salt
  • to taste ground pepper
  • to taste mandarin zest (grated)
  • to taste parsley (chopped)

Preparation

  • 1) Gut the sea bream, rinse it under running water and place it on a baking sheet with parchment paper.

    2) Season the inside of the sea bream with a pinch of fine salt and a few slices of mandarin.

    3) Bake the sea bream at 392°F, in the middle of the oven, for about 20 minutes. The fish is ready when it can be easily pierced with a fork.

    4) After baking, clean the fish by removing skin, bones, and central spine, and derive 4 or more fillets.

    5) In a bowl, prepare the sauce cold, emulsifying with a fork (or an immersion blender which will make it thicker) for about a couple of minutes, the oil, juice, and grated zest of mandarins, some parsley leaves, if you like, pepper, and salt to taste. We will obtain a fragrant fluid sauce that we will use to dress our delicious sea bream fillets.
