The bay leaf and star anise herbal tea is a fragrant drink to sip when the chill begins to set in during fall and winter, or as a digestive drink to sip warm. The properties of bay leaf and star anise, however, do not end with their culinary uses; in fact, it’s worth discovering them all. Both spices have a pleasant aroma and flavor; indeed, it is a drink that can be enjoyed hot even without sweetening, otherwise we can use honey or brown sugar.

- Preparation time: 5 Minutes
- Portions: 4
- Cooking methods: Boiling
- Cuisine: Italian
- Seasonality: Fall, Winter
Ingredients
- 4 1/4 cups water
- 3 leaves bay leaf
- 3 star anise seeds
- to taste honey (or brown sugar)
Steps
The bay leaves I use are large and three are enough to flavor a liter of water; you can also add more if they are small.
Wash the bay leaves (if fresh), break them into pieces, and put them in a kettle with the water and slightly crushed star anise seeds.
When the water comes to a boil, turn off the heat, cover, and let it infuse for about 10 minutes.
After the time has elapsed, strain, pour our fragrant bay leaf and star anise tea into a cup, sweeten (if you like), and enjoy this warm, aromatic, and healthy drink.
