Chickpea Flour Batter for Frying

The batter for frying made with chickpea flour is a gluten-free and egg-free preparation suitable for everyone. It’s very quick, easy, and tasty, and it’s ready to use immediately as it doesn’t need to rest. We can use it to create delicious fried foods (anchovies, calamari, vegetables, etc.) to be served as appetizers, at buffets, for a gathering with friends, etc. The batter is prepared in a few minutes and there is no need to use sparkling water.

Ingredients

  • 3/4 cup Chickpea flour
  • 1/2 cup Water (ice-cold)

Preparation

  • In a bowl, sift the chickpea flour and slowly add the water until you achieve a very fluid, almost liquid consistency.
    For crispy fried foods, the batter should be quite fluid, not thick, because it needs to slide off easily.
    If you want softer fried foods, use 1/2 cup of water to make a thicker batter.
    For frying: in a non-stick saucepan, add enough oil and wait for it to reach temperature; in the meantime, dip the food to be fried (make sure it’s well dried) into our batter, wait for the excess batter to drip off, and fry just long enough to create a delicious crust.
    For perfect frying, use a seed oil that withstands high temperatures (such as peanut oil) and ensure it reaches the ideal temperature before starting to use it; also, fry a few pieces at a time, always waiting a few seconds before adding the next piece to ensure that the oil temperature doesn’t drop too much.
    Salt and serve our fries immediately. The zucchini flowers and sage leaves (in the photo) were quickly dipped in the batter and then in hot oil for a few seconds.
    A couple of simple and easy tricks to check if the oil is at the right temperature:
    1) Add a breadcrumb to the hot oil and if it starts frying immediately, then the oil has reached the right temperature.
    2) Dip the wooden handle of a ladle or a long toothpick into the hot oil; if bubbles form immediately around it, then the oil is ready to use.
