Easy Pomegranate Sorbet Without an Ice Cream Maker

Pomegranate sorbet is a very easy and refined spoon dessert to prepare without an ice cream maker; it also contains no egg whites, milk, or derivatives. It’s a completely vegetarian recipe, suitable for everyone, perfect for concluding an important meal. Let’s take advantage of this wonderful autumn fruit that nature provides us to savor a sorbet with a smooth texture, vivid and captivating color, and wonderful flavor. Thanks to the simplicity with which it can be made, we can prepare the pomegranate sorbet when we have guests or on special occasions.

Ingredients

  • 1 cup Water
  • 4.23 oz Sugar
  • 0.85 cup Pomegranate juice
  • 1 pinch Fine salt
  • 1 tbsp Lemon juice
  • as needed Pomegranate seeds

  • In a small pot, pour the water, sugar, and a pinch of fine salt. Bring to a boil over low heat, and let it simmer for a couple of minutes. Then turn off the heat and let it cool completely.

    When the syrup is cool, we can deseed 2 or 3 pomegranates to obtain the quantity of juice we need (depending on the size of the fruits). To get the juice, we can use a juicer or, if not available, a potato masher.

    Filter the juice from any impurities and add it to the cold syrup. Also add the lemon juice (which will help enhance the aroma and flavor of the pomegranate even more), a generous handful of seeds, mix, and pour everything into an airtight glass container to freeze in the freezer.

    After 3 hours, take out the container and break up the ice crystals that have started to form with the tines of a fork. Return it to the freezer and repeat this operation after about 3 hours. Then let the pomegranate sorbet rest, “mature,” in the freezer for at least one night; this way, the flavor and aroma will be much more intense and delicious.

    Before serving the pomegranate sorbet, we can blend it to make it more homogeneous.

    Pour it into serving cups and enjoy this wonderful delight.
