The egg-free coffee cream is one of my favorite sweet recipes, because besides being delicious, it is also gluten-free. It’s very easy, quick, versatile, requires no cooking, perfect to enjoy as a spoon dessert, to stuff and fill cakes of all kinds, or to simply spread. If at Christmas or New Year we want to offer a different, special dessert while staying within tradition, we can fill our panettone or pandoro with this delight; it will make our guests happy. We can also use decaffeinated coffee, making this cream suitable for everyone, including children.

Ingredients
- 1 1/4 cups plain Greek yogurt (also lactose-free)
- 4 tbsps instant coffee
- 2/3 cup granulated sugar
- 1 pinch vanilla paste or liquid
Steps
Take three heaping tablespoons of Greek yogurt (it needs to be firm and dense to achieve the optimal creamy consistency) and put them in a large bowl.
Add the instant coffee and sugar, and mix with a teaspoon or fork until the instant coffee is completely dissolved (it takes about a minute).
Combine the mixture with the remaining yogurt, along with the vanilla, and mix it thoroughly. Taste to check the sweetness level of the coffee cream; you can add more sugar if needed.
The egg-free coffee cream is ready to be used or enjoyed as a spoon dessert.
Additional Idea
If your instant coffee is not finely granulated but a bit coarser, let the cream rest for just 5 minutes and then stir again for about 10 seconds; this way, thanks to the moisture released by the yogurt, any coffee residues will completely disappear without leaving a trace.
If you want a cream with a milder coffee taste, just use half, i.e., only 2 tbsps, instead of 4.
We can also use Greek yogurt flavored with coffee or vanilla. In this case, it will be necessary to reduce the amount of sugar added to the coffee cream, as otherwise, the preparation might become too sweet. We taste to adjust the sweetness according to personal preference.
