The egg-free coffee cream is one of my favorite sweet recipes because, besides being very delicious, it is also gluten-free. It’s super easy, very quick, versatile, requires no cooking, and perfect to enjoy as a dessert, to fill and frost all kinds of pastries, or simply spread. If at Christmas or New Year’s we want to offer a different, special dessert while staying traditional, we can fill our panettone or pandoro with this delight; it will delight our guests. We can also use decaffeinated coffee, making this cream suitable for everyone, including children.

Ingredients
- 1 1/4 cups plain Greek yogurt (also lactose-free)
- 0.7 oz instant coffee
- 4.4 oz granulated sugar
- 1 pinch vanilla powder
Steps
Take three heaping tablespoons of Greek yogurt (it needs to be thick and firm Greek yogurt to achieve the perfect creamy consistency) and place them in a large bowl.
Add the instant coffee and sugar, and stir with a teaspoon or fork until the instant coffee is completely dissolved (this takes about a minute).
Mix the blend with the remaining yogurt, along with the vanilla powder, and fully combine. Taste to check the sweetness level of the coffee cream; you can add more sugar if needed. The egg-free coffee cream is ready to be used or enjoyed as a dessert.
An Extra Idea
If your instant coffee is coarse-grained rather than fine, let the cream rest for just 5 minutes, then stir again for about 10 seconds; thanks to the moisture released by the yogurt, any coffee residues will completely disappear, leaving no trace.
If you desire a milder coffee flavor, simply use half the amount, that is, just 0.4 oz instead of 0.7 oz.
We can also use Greek yogurt flavored with coffee or vanilla. In this case, it will be necessary to reduce the amount of sugar added to the coffee cream, otherwise, the preparation may become too sweet. Taste to adjust the sweetness to your personal preference.
