Eggless raisin cookies are delicious pastries, perfect for breakfast, snack, and leisure time. They are very easy to make, can be eaten even by those who are intolerant to eggs, and can be customized in various ways. Let’s prepare them to accompany coffee breaks, after dinner, or whenever we crave something sweet. Eggless raisin cookies keep well for several days, securely closed in a food bag or tin box.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup milk
  • 7/16 cup granulated sugar
  • 1/2 cup raisins
  • 1/4 cup soft butter
  • 1/2 tsp baking powder
  • 1 pinch fine salt
  • 1 tsp liquor of choice
  • to taste grated orange zest

Preparation

  • Rinse the raisins under running water and soak them in a little boiling water for 10 minutes to soften them.

    Take out the butter and cut it into cubes, making it easier and quicker to incorporate into the other ingredients.

    Finely grate the zest of an orange.

    In a large bowl, beat the butter, grated orange zest, and sugar together with an electric mixer until you have a fluffy cream (a couple of minutes at most).

    After 10 minutes, drain the raisins, pat them dry with some paper towel, and add them to the butter and sugar mixture. Add all the other ingredients and mix them with the electric mixer until you get a smooth, creamy, and homogeneous batter. If the cookie dough turns out too stiff (because not all flours absorb liquids the same way), you can add an additional teaspoon or tablespoon of milk depending on the consistency you want to achieve.

    Line a baking sheet with parchment paper and, using 2 teaspoons, form balls slightly larger than a walnut and place them on the sheet, spaced about a finger apart.

    Transfer the baking sheet, well covered, to the fridge for at least 30 minutes; this way, the cookies will better hold their shape during baking, without flattening too much.

    After 30 minutes, turn on the oven to 350°F and bake the eggless raisin cookies for about 20-25 minutes (always check the baking time, as it can vary from oven to oven).

    When the base of the cookies is golden, they are ready. Turn off the oven, turn on the grill for a few minutes to brown them on the surface as well.

    Take them out of the oven, let them cool, and dust them with sugar. These delicious cookies can be stored in a tin box or a food bag.
