Very easy, delicious, refreshing, today we are talking about yogurt ice cream bars with blueberries. It’s a kind of frozen yogurt with fresh fruit; a recipe designed for children, but in fact, I often prepare it at home, even with other types of fresh fruit pieces, because they are an excellent and fresh alternative to afternoon coffee, perfect as a dessert to offer guests and, not to be overlooked, no special machinery or tools are needed (the molds can be replaced with coffee cups). They are made with 3 ingredients and without the addition of sugars, eggs, artificial colors, or preservatives. The blueberry and yogurt ice cream bars can also be made with lactose-free or plant-based yogurt; furthermore, they are gluten-free.

Ingredients
- 1 1/4 cups vanilla yogurt (or other flavor as desired)
- 3/4 cup fresh blueberries
- to taste grated lemon zest
Steps
1) Thoroughly wash the fresh blueberries, gently dry them and set them aside.
2) In a bowl pour all the yogurt (traditional yogurt is fine), add the finely grated lemon peel (which will help enhance the flavor and aroma of both the blueberries and vanilla) and the blueberries (use only half, because a little less might be needed).
3) Mix all the ingredients; before pouring the mixture into the molds, place one or two blueberries in each empty mold, depending on the width of the mold tip.
4) After filling the molds to the brim with the yogurt and blueberry mixture, transfer them to the freezer, letting them freeze for about 35/40 minutes; then, we can insert the wooden sticks which, this way, will remain straight. Let them freeze completely for another 2/3 hours at most.
To remove the blueberry and yogurt ice cream bars, simply quickly run the mold under a stream of cold running water or leave them out of the freezer for about 30 seconds.
