Lemon Syrup Popsicles

Today I want to talk about these delicious and aromatic popsicles made with two ingredients, namely homemade lemon syrup and simple water. Their preparation is extremely easy and quick, especially if you already have the lemon syrup ready; otherwise, you just need to prepare it, as described here, and wait an hour for it to be sufficiently cold. Popsicles are not just a fancy treat, but they are very refreshing, therefore perfect to fight the heat. The lemon syrup popsicles do not contain milk or its derivatives, nor gluten.

Ingredients

  • 3.7 oz lemon syrup
  • 10.5 oz water

  • 6 Popsicle Sticks

Steps

The weight of each popsicle, that is 70 grams, is based on the capacity of my molds (each mold filled to the brim); with these quantities, you can make 6.

If, on the other hand, you want to make more, for your convenience of calculation, I will tell you that the proportion for each popsicle is 0.6 oz of syrup to which you add 1.7 oz of water. If you prefer them a little sweeter, you can increase up to 0.8 oz of syrup for each popsicle. Do not exceed these amounts of syrup, otherwise the popsicles may not freeze perfectly.

Prepare the molds

Mix the lemon syrup and water together, fill the molds to the brim, and immediately transfer them into the freezer, where you will let them freeze for about an hour and a half to two hours, to then be able to insert the sticks before the mixture freezes completely.

After this period, you can insert the popsicle sticks and let them freeze completely for about two more hours (depending on your freezer).
