The melon and cream dessert is a very quick, refreshing, gluten-free recipe. It’s a spoon dessert made with lots of fresh fruit; in this case, it’s cantaloupe melon, which will please all our guests for its delicacy and lightness. It can be prepared in a few minutes and can also be made in advance and kept in the fridge. We can personalize our melon and cream dessert as we like, using other fresh seasonal fruits, according to our tastes.

Ingredients
- 1 Cantaloupe melon
- 1 cup Fresh liquid cream (also lactose-free)
- 3 tablespoons Sugar
- to taste Lemon zest
- to taste Mint leaves
Preparation
1) Remove the peel and seeds from the melon, cut it into large pieces, and then reduce it to cubes slightly larger than a hazelnut.
2) Put the melon cubes in the fridge, covered with cling film (if the preparation is not intended for children, you can sprinkle the fruit with a little liquor, mix, cover, and refrigerate).
3) Grate the zest of a lemon and set it aside.
4) In a large bowl, whip the fresh cream together with the sugar (the amount of which varies according to taste) and the grated lemon zest until stiff peaks form.
5) Assemble our melon and cream desserts. Place a handful of melon cubes at the bottom of our glasses, add some cream, more melon cubes, and finish with cream until covering the top edge of the glass. Decorate with more fruit, mint leaves, or anything else to your liking.
