Father’s Day is approaching and, if you love coffee, today I suggest an easy and quick — and very tasty — idea to celebrate it. This is a spoon dessert with no baking, based on coffee cream and amaretti. Only a few ingredients are needed to prepare these extremely simple and fast single-portion mini cups, ideal for all special occasions and holidays, a last-minute dessert for unexpected guests, or as a chic and refined end to a meal or dessert buffet. The amaretti pair perfectly with the aroma and flavor of coffee, also creating a pleasant play of textures — creamy and crunchy — on the palate.

Ingredients
- 7 oz fresh spreadable cheese (also lactose-free)
- 3.5 oz amaretti
- 2 tbsp powdered sugar
- 3 tbsp dark chocolate chips
- 1.5 tsp instant coffee powder

Steps
I used glass espresso cups of 7 cl (about 2.4 fl oz / 70 ml); you can use any type of single-portion glasses you prefer, keeping in mind that the ingredient quantities are based on the size of the cups I used, as shown in the photo.
For each single mini cup I calculated: about 1.2 oz of coffee-and-amaretti cream and 5 crumbled amaretti; of course these are purely indicative amounts and will vary depending on the cups or glasses you use.
Let’s make the cream. In a bowl place the spreadable cheese, the instant coffee powder and the powdered sugar. Mix very well with a fork until you obtain a smooth mixture; taste and, if necessary, adjust the sweetness of the cream.
Coarsely crumble the amaretti in a small bowl and add the dark chocolate chips, according to the sweetness preference of your guests, then mix.
Now assemble the dessert. At the bottom of each mini cup place two teaspoons of the crumbled amaretti mix (about 2 amaretti for the cups I used) with chocolate chips, then two teaspoons of coffee cream and finish with the crumbled amaretti mix (for the wider top part of the cup I used 3 crumbled amaretti).
Because these coffee-and-amaretti mini cups are very quick to make, I recommend preparing the cream and the crumbled amaretti-and-chocolate mix in advance and assembling them only shortly before serving, to prevent the crumbled amaretti from becoming too soft due to the moisture released by the cream.
