The filled puff pastry swirls are delicious and tempting finger food bites filled with grilled zucchini, spiced ricotta, and diced bacon. They are very easy and quick to prepare and give us the opportunity to use up vegetables, cold cuts, or cheeses. They are ideal for parties, a quick and improvised dinner, a picnic, and so on. It’s a recipe we can customize from time to time, creating always new and appetizing dishes; for example, we can use olives instead of spices, or cheese like Philadelphia, robiola, or crescenza instead of ricotta.

Ingredients
- 1 sheet Puff Pastry (rectangular)
- 2 Small Zucchini (grilled)
- 1.75 oz Smoked Bacon
- 3.5 oz Sheep Ricotta
- to taste Fine Salt
- to taste Spices
Preparation
Wash some sage leaves, a sprig of rosemary, and chives. Dry them and chop them finely.
Put the ricotta in a bowl and mix it with the chopped herbs and a pinch of salt. Instead of spices, you can use green or black olives, coarsely chopped and mixed with the ricotta.
Grill the zucchini and set them aside.
Preheat the oven to the highest setting.Unroll the puff pastry on the generously floured table and roll it out further (also flour the top of the pastry).
Start filling it by spreading the herb cheese first, then add the zucchini, and finally the diced bacon. Roll the puff pastry quite tightly, without crushing it, and cut our swirls the width of one or two fingers (depending on our needs) with a smooth-bladed knife.
Place the filled puff pastry swirls on a baking tray lined with parchment paper and bake them on the lowest rack in the preheated oven.Let them bake for about 15/20 minutes (always check the cooking as times may vary from oven to oven).
Once cooked, take the swirls out of the oven, let them cool slightly, and enjoy them.
