Stuffed bread bites are small, very soft, and tempting finger foods to be served at a buffet, to accompany aperitifs or pizza. We can fill them with cold cuts, vegetables, customizing them according to our tastes and needs. They are made with fresh yeast and are really very easy. We can create really tasty appetizers for all occasions.

Ingredients
- 3/4 cup All-purpose flour
- 1/4 cup Water
- 1/2 tsp Fresh yeast

- 4 cups All-purpose flour
- 2 tsp Fine salt
- 1 1/4 cups Water (room temperature)
- 7 oz Prosciutto (chopped)
- 1 Zucchini
Preparation
Let’s prepare the pre-dough (or “lievitino”).
In a bowl, dissolve the fresh yeast with 1/4 cup of water, add the sifted flour, and mix to obtain a dough ball, which we will cover and let rise until it doubles in size.
Let’s prepare the dough. When the pre-dough has risen, transfer it into a bowl or the bowl of a stand mixer. Add the flour, water, and salt, and mix coarsely.
Add the chopped prosciutto and zucchini and continue to work the ingredients until you get a smooth, elastic dough that is still a little sticky.
With the help of some flour (or by oiling our hands), divide the dough into balls of about 30/35 grams, which we will place on a baking tray covered with parchment paper, spacing them about an inch apart, and let them rise until they double.
Preheat the oven to 390°F.
As soon as it is well-heated, bake the stuffed bites in the middle of the oven for about 12/15 minutes, or until they are well risen and golden; we can serve them either hot or cold. Serve the stuffed bread bites also as tasty “hunger-busting” snacks, they will be a real success.
