Vegetarian Bruschetta with Grilled Zucchini

A tasty appetizer or an unusual side dish, perhaps a vegetarian snack, however you want to classify them, the bruschetta with grilled zucchini are light, flavorful, and bring everyone together, vegetarians and non. They are perfect as an appetizer to accompany pizza or dishes based on fish and meat. Ready in just over half an hour, they can be personalized and enriched with other ingredients to make them even more enticing.

Ingredients

  • 4 Zucchini
  • 10 slices Rustic Bread
  • to taste Extra Virgin Olive Oil
  • to taste Fine Salt
  • 1 clove Garlic
  • to taste Vinegar (optional)

Preparation

  • Wash and remove the ends of the zucchini.

    Using a vegetable peeler, slice them lengthwise and grill them on both sides for a few moments.

    Place the zucchini slices on a rack to cool without overlapping them; this way they will release excess moisture and avoid creating that annoying condensation that would also ruin the crispness of the bruschetta.

    Cut the bread into slices about a finger thick. Grill them on both sides and place them, one by one, on a tray or cutting board.

    Place 6-7 slices of zucchini (depending on size) on each slice of bread. Finally, season the bruschetta with a little finely chopped garlic, fine salt, extra virgin olive oil, and, if desired, a few drops of white or balsamic vinegar.

    Voilà, the bruschetta with grilled zucchini are ready to be served and enjoyed in all their flavorful simplicity.
