The whole wheat sandwiches with green beans and double mozzarella are irresistible, easy, and tasty. They are the ideal meal to enjoy at work, on vacation, on a trip, etc. It is a tasty way to encourage children to eat vegetables. We can also serve them as an appetizer by reducing their size. The filling includes, besides green beans, a double layer of mozzarella that will make our sandwiches even more stringy and delicious. We can use whole wheat or white sandwich bread.

Ingredients
- 20 slices whole wheat or sandwich bread
- 10.5 oz boiled green beans
- 10 soaked sun-dried tomatoes
- 10.5 oz mozzarella (or other stringy cheese)
- to taste extra virgin olive oil
Steps
Wash and remove the ends from the green beans. Put them in a pot filled with water and bring to a boil.
Once boiling, add coarse salt and let the green beans cook until tender.
Turn off the heat and drain them to cool. Save some boiling water and soak the sun-dried tomatoes to soften them as well.
Trim the edges off the whole wheat sandwich bread and set them aside (you can use them for breading).
Slice the mozzarella thinly.
Chop the sun-dried tomatoes.
Preheat the oven to 392°F.
Assemble the sandwiches. With a rolling pin, flatten the slices of sandwich bread to thin them out.
Add a slice of mozzarella, boiled green beans, chopped sun-dried tomatoes, another slice of mozzarella, cover with another slice of sandwich bread, press with your hands, brush the top with a bit of extra virgin olive oil, and place them on a baking sheet lined with parchment paper.
Place the baking sheet with the sandwiches in the hot oven, in the middle, for 5 minutes. After the time, turn off the oven and continue for another 5 minutes under the grill. Our sandwiches are ready.
If you don’t want to turn on the oven, you can also use a panini press, or a quick pass in the microwave, since we only need heat to toast the bread and make the mozzarella more stringy.
