- Preparation time: 20 Minutes
- Portions: 10/12 slices
- Cooking methods: Oven
- Cuisine: Italian
- Seasonality: Autumn, Winter, and Spring
Ingredients
- 2 1/4 cups all-purpose flour
- 3 tbsps potato starch
- 1 packet baking powder
- 3/4 cup granulated sugar
- 1 pinch fine salt
- 1/2 cup vanilla yogurt
- 3 medium eggs
- 1/4 teaspoon vanilla paste
- 5 tbsps vegetable oil
- 1/2 cup chopped walnuts
- 3 1/2 oz dark chocolate (coarsely chopped)
- as needed walnut halves and chopped chocolate (for decoration)
Preparation
Line a loaf pan with parchment paper and preheat the oven to 350°F.
Prepare all the ingredients in front of you. You can use any other flavor of sweet yogurt, as long as it doesn’t have fruit pieces.
Sift together flour, baking powder, and potato starch, place them in a stand mixer bowl along with all the other ingredients, and mix until you get a creamy and well-blended mixture.
Pour the mixture into the baking dish, level it with the back of a spoon, decorate the surface of the plumcake with the walnut halves and chocolate pieces that we had set aside. Bake in the middle of the oven for about 35-40 minutes at most.
Check the cooking by inserting a long skewer that should come out without traces of raw creamy batter.
Immediately remove the yogurt plumcake with walnuts and chocolate from the oven and let it cool before slicing. You can dust it with powdered sugar.
