Yogurt Pound Cake with Walnuts and Chocolate

Ingredients

  • 2 1/4 cups all-purpose flour
  • 3 tbsps potato starch
  • 1 packet baking powder
  • 3/4 cup granulated sugar
  • 1 pinch fine salt
  • 1/2 cup vanilla yogurt
  • 3 medium whole eggs
  • 1 packet vanillin
  • 1/3 cup vegetable oil
  • 1/2 cup chopped walnuts
  • 3 1/2 oz dark chocolate (coarsely chopped)
  • to taste walnut halves and chopped chocolate (for decoration)

Preparation

  • Line a loaf pan with parchment paper and preheat the oven to 350°F.

    Prepare all the ingredients in front of you. You can use any other sweet yogurt flavor, as long as it doesn’t have fruit pieces.

    Sift together the flour, baking powder, and potato starch, place them in the bowl of a stand mixer along with all the other ingredients, and mix until you obtain a creamy and well-blended mixture.

    Pour the mixture into the pan, level it with the back of a spoon, decorate the surface of the pound cake with the walnut halves and pieces of chocolate we had set aside. Bake in the middle rack for about 35-40 minutes at most.

    Check the cooking by inserting a long skewer that should come out without traces of raw creamy batter.

    Immediately remove the yogurt pound cake with walnuts and chocolate from the oven and let it cool before cutting. You can sprinkle it with powdered sugar.
