Yes, you read that right, almost no cost because we will use all the ingredients we already have in our pantry, or if you want, you can buy them for this occasion and enjoy an extremely tasty and super cheesy dish! Ingredients for a tray of baked potatoes and scamorza for 4 people
- 6 large potatoes
- 8.8 oz scamorza (or drier mozzarella)
- 3.5 oz Milano salami (or any other leftover cured meat)
- 3.5 oz butter
- 1.75 cups breadcrumbs
- 1 oz grated Parmesan cheese
- to taste salt

Preparation of baked potatoes and scamorza
The first step is to wash and peel the potatoes, then cut them into slices about 0.6-0.8 inches thick and boil them in plenty of salted water for about 5 minutes or until they are soft. Boiling times for potatoes may vary depending on the variety and freshness of the potatoes used, I suggest keeping an eye on them after 4-5 minutes and checking with a fork that they have softened.
Now take a leftover cured meat (or your preferred choice) and cut it into strips, then cut the scamorza into cubes and set aside.
Take a baking dish and grease the bottom with butter, then start arranging the potato slices slightly overlapping each other until the dish is full.
Now cover the potatoes with the cured meats and the scamorza we cut earlier, a generous sprinkle of breadcrumbs, three tablespoons of grated Parmesan cheese, and then lots of little butter flakes scattered here and there.
Bake in a static oven at 350°F for about 15 minutes or until a golden crust forms on the surface. If you wish to cook in an air fryer, set it to 340°F for about 10 minutes, but always keep an eye on the cooking as times may vary depending on the model of air fryer used.
An extra tip:
* You can customize the recipe with the ingredients you prefer; to make it even more tempting, you can add diced cheeses and a bit of Gorgonzola, for example;
* Use the cured meats you prefer or those you want to use up; diced options work great too;
* If there are leftovers, baked potatoes and scamorza can be stored in the refrigerator, well covered, for up to two days;
