Ingredients for a baked ricotta crumble cake for 8 people
- 2 cups all-purpose flour
- 1/2 cup butter
- 1/2 cup sugar
- 1 egg
- 17.6 oz ricotta cheese
- 3/4 cup powdered sugar
- 3 tbsp dark chocolate chips
- to taste powdered sugar

Preparation of the baked ricotta crumble cake
The first step is to create the ricotta filling: make sure it is well-drained, I recommend draining it in the fridge for a few hours if not, then take a bowl and a whisk and mix the ricotta with the powdered sugar until you get a smooth, lump-free cream.
Now add the chocolate chips, give it a final stir, and set aside.
With the help of a stand mixer or by hand (the process is the same), mix the flour with the sugar, add the cold butter in small pieces, and finally the egg yolk.
Start kneading (if using hands, do it quickly to prevent the butter from getting warm and melting) until a mixture of crumbs is formed.
Line our pan (it is important that it is 9.5 inches for a result like in the photo) with about half of the dough, press lightly to compact it, and create a slight edge.
Pour the ricotta filling into the pastry shell we just made, then the other half of the crumble on top, covering it entirely.
Bake in a static oven at 350°F for about 25 minutes. I recommend placing the pan in the center of the oven for even cooking. When the surface is golden, we can take our crumble out of the oven and wait for it to cool.
Wait for the crumble to cool before dusting it with plenty of powdered sugar, then serve it to enjoy all its goodness!

* The baked ricotta crumble cake can be stored at room temperature, well-covered, for up to 2/3 days in winter, and in the fridge in summer;
* You can customize it with candied fruits or nuts instead of chocolate chips (or in addition);
