To prepare these chicken and spinach sticks, not many steps are necessary; a good mixer will suffice, and the rest will have to be done by hand. Ingredients for chicken and spinach sticks for 4 people
- 12 oz chicken breast
- 7 oz spinach, cooked, boiled (about 4 frozen cubes)

- 1/2 cup grated Parmesan cheese
- to taste bread crumbs (plus extra for coating)

Preparation of chicken and spinach sticks
As mentioned at the beginning, we can prepare the sticks a bit in advance and let them rest in the fridge until it’s time to cook them, or alternatively, we can prepare them and take them directly to cooking.
In the mixer, put the chicken breast and the previously blanched and squeezed spinach and activate the blades until reduced to a nearly pureed mixture.
Transfer the mixture to a bowl, adjust with salt and pepper, add the egg, and start kneading; you will obtain a very soft and sticky mixture. Now add the grated cheese and finally the bread crumbs.
I recommend adding the breadcrumbs one tablespoon at a time; we need to achieve a soft and workable mixture. If we add too much, we risk that our sticks will become too dry during cooking.
Take some of the mixture and shape it into small sausages (you can actually give them the shape you prefer), then roll them in breadcrumbs. You can let them rest in the fridge well-covered with aluminum or go directly to cooking.
Place the sticks in the basket of our air fryer covered with a parchment paper sheet, spray them generously with oil, and cook at 356°F (180°C) for about 15 minutes or until they are well golden.
An extra tip:
* Cooking times may vary depending on your air fryer model; check after about ten minutes to verify their cooking;
* If you want a richer version, you can make small meatballs and put a cube of mozzarella or scamorza inside;
* Serve them with a nice salad or with a dipping sauce, such as a yogurt sauce with oil, lemon juice, and spices.
