Ingredients for 12 Coconut and White Chocolate Truffles
- 2.8 oz white chocolate
- 4.6 oz wafer (vanilla flavored)
- as needed grated coconut
Preparation of Coconut and White Chocolate Truffles
As I mentioned at the beginning, it takes very few minutes to prepare these truffles, and if you have a microwave, you can melt the chocolate in less than a minute!
The first step is to melt the white chocolate. If you have a microwave, use the function to melt chocolate or butter, set the weight, and let it go for about 30 seconds. It’s important, when melting chocolate in the microwave, to occasionally open and stir the chocolate to see how soft it has become and to stop when necessary. Keep in mind that each microwave is different, and the times I indicated are relative, so it’s better to check to ensure it’s melted just right.
Now take a blender and blend the wafers, we need to crumble them completely, then add them to the melted chocolate and use a spatula to mix well.
We need to obtain a soft and workable mixture, if you notice it’s still too soft, let it rest in the fridge for ten minutes, this way the chocolate will harden a bit, and we’ll be able to create the truffles.
Make balls slightly smaller than a walnut, then roll them in grated coconut, and our truffles are ready to be enjoyed!
