To prepare this recipe, we’ll need to follow a few steps that might seem long, but I assure you it comes together quickly, and the creamy goodness will surprise you!
- 1 tablespoon extra virgin olive oil
- 7 oz sausage
- 3 peppers
- Half cup white wine

Preparation of Pasta with Sausage and Peppers
In a large pan, heat a drizzle of oil and crumble the sausage, removed from its casing. Sauté on high heat, and when it’s almost fully cooked, deglaze with a bit of white wine, let it evaporate, and then set aside.
While the sausage is cooking, wash and dry the peppers, remove the stems, seeds, and white filaments, and cut them into squares. Drain the sausage on absorbent paper and add the peppers to the fat remaining in the pan. Cook them on high heat (well-covered), adding a bit of water, until they are soft. Finally, adjust the seasoning with salt and a pinch of pepper.
Once the peppers are cooked, blend them until you obtain a smooth cream. Return to the heat and add the robiola cheese; it will only take a few moments for the heat to melt it, making your pepper cream velvety and flavorful.
Cook the pasta in plenty of salted water and drain it about 3 minutes before the time indicated on the package. Toss it into the pan with the pepper cream and toss over the heat.
