CRISPY BAKED POTATOES WITH CHEESE Today I present you a clever recipe, perfect for serving a hearty and very tasty dish, also ideal for using up any leftover cheeses and/or cold cuts that we have in the fridge. I must say it was really a success; we devoured them in no time and to prepare the potatoes I preferred microwave cooking saving a lot of time, but I will also indicate the times and methods for cooking in a traditional oven. Ingredients for 4 people for crispy baked potatoes with cheese

  • 1.5 lbs potatoes
  • 3.5 tbsp butter
  • 5 oz scamorza (or other cheese)
  • 2 tbsp breadcrumbs
  • 2 tbsp grated Parmesan (or Grana)

Preparation of crispy baked potatoes with cheese

As you will read, the preparation of these potatoes is really quick and if you want to get ahead of time, you can boil them first and then peel and season them just before serving. To boil the potatoes I used the microwave; if you want to boil them traditionally, plunge them into unsalted boiling water after pricking them with a fork and let them cook until they are soft.

  • To boil the potatoes in the microwave, proceed as follows: wash and dry the potatoes, then prick them with a fork and place them inside a bowl like this or another microwave-safe container. Cover the bowl with microwave-safe plastic wrap, then use the tip of a knife to make three holes to allow steam to escape during cooking.

  • Set the oven to 800W and let cook for 13 minutes, after which we’ll remove the plastic wrap (be careful of the steam that will come out, perform this operation with caution) and once cooled we can peel our potatoes.

  • Once cooled (do not do it when hot or they will crumble) cut the potatoes into slices about 1/4 inch thick, then take a baking dish, grease it with butter on the bottom and start alternating the potato slices with slices of scamorza.

  • Cover the potatoes with butter flakes, then a generous sprinkle of breadcrumbs and grated cheese and finish cooking in the microwave with the combi mode (grill+micro) for about 12 minutes, or if you cook them in a traditional oven, on the middle rack at 375°F in static mode for about 20/25 minutes or until a golden crust forms on the surface.
