- 8.8 oz cherry-sized mozzarella balls
- 2 eggs

Preparation of Fried Mozzarella Balls
The first step is to drain the mozzarella balls of their liquid and dry them by patting them with paper towels. This way, they will better “accept” the breading, and there’s less risk of them opening during cooking.
After drying the mozzarella balls, gently coat them first in flour, shaking off the excess, then in beaten eggs with a pinch of salt, and finally in breadcrumbs.
Coat them once more in the egg and then in the breadcrumbs for a double breading that will make them more resistant during frying.
At this point, place them on a plate, cover them with plastic wrap, and let them rest in the freezer for about an hour, just enough time to firm up a bit.
In a large pan, heat abundantly some seed oil. When the oil reaches a temperature of about 340°F (always do the stick test to see if the temperature is correct), immerse the mozzarella balls in the hot oil and fry them, turning them continuously on all sides for about three minutes.
Drain them on paper towels and lightly pat them. Now you can bring them to the table to enjoy their endless goodness!
A Little Extra Tip:
Oil Temperature: Use plenty of seed oil (such as peanut oil) in a high-sided pot. The ideal temperature is between 340°F and 355°F. Oil too cold would make them absorb too much fat and soften the breading, while too hot would burn the outside before the inside becomes gooey.
• No Thermometer Tip: Drop in a pinch of breadcrumbs or a wooden skewer; if it sizzles immediately and colors, the oil is ready.
• Quick Fry: The mozzarella balls cook in no time, about 1-2 minutes or until golden. The cooking must be very fast to prevent the inner mozzarella from completely melting and breaking the breading.
• Cook in Batches: Fry a few mozzarella balls at a time (4-5 at most) to avoid drastically lowering the oil temperature.
• Drain Immediately: As soon as golden, drain them with a slotted spoon and place them immediately on paper towels to remove excess oil.
• Salt and Serve: Lightly salt them (if you haven’t already done so in the egg) and serve immediately while they are super hot and gooey!
3. Alternative Cooking Methods (Less Traditional)
• In Air Fryer: Spray the mozzarella balls with a bit of oil and cook at about 355°F for 4-5 minutes, turning them halfway through until golden.
• In Oven: Place them on a baking sheet with parchment paper, spray with a bit of oil, and bake at 390°F for about 15 minutes or until desired golden color.
