Ingredients for air fryer eggplant sticks for two people
- 1 eggplant
- as needed extra virgin olive oil
- as needed salt
- as needed pepper
- 4 tablespoons breadcrumbs
- 1 tablespoon grated Parmesan cheese
- A few leaves mint

Preparation of eggplant sticks in air fryer
an easy and quick recipe to maybe use up some eggplants that have been in the fridge for too long, these were like French fries but with air frying they will be much lighter and we’ll avoid excess oil usage.
let’s start by washing and drying the eggplant, then remove the top part and slice it lengthwise into slices about 0.4 inches thick.
now cut each slice into rectangular sticks, making sure they are all roughly the same size to ensure that they cook evenly.
Combine the eggplant sticks in a bowl, mix with your hands, then season with salt and pepper and add the breadcrumbs and grated Parmesan cheese. Mix well until all the eggplant sticks are well coated.
cook in the air fryer at a temperature of 356°F for about 15 minutes, cooking times may vary depending on the model you have. Always remember to turn them halfway through cooking to ensure they cook evenly on all sides.
once the sticks are cooked, transfer them to a bowl and top with a few mint leaves torn by hand, you’ll see what a scent!
