Ingredients for about 20 iced decorated cookies

  • 3 1/2 cups all-purpose flour
  • 7 oz butter
  • 2 egg yolks
  • 1 1/8 cups powdered sugar
  • 1 egg white
  • 4 drops lemon juice
  • 1 1/4 cups powdered sugar

Preparation of iced decorated cookies

  • Let’s get started with the cookie preparation, which as you’ll see is particularly quick. In the bowl of the stand mixer (if kneading by hand, the procedure is the same but will take a few more minutes) we put the flour, sugar, and cold butter cut into pieces.

  • We begin to knead with the paddle attachment, after about 1 minute add the two egg yolks and continue kneading until we get a workable and non-granular dough.

  • Transfer the dough to the work surface, handle it a bit then flatten it and wrap it in plastic wrap, letting it rest in the fridge for about an hour.

  • After the refrigeration time, take the dough and work it a bit then roll it out between two sheets of parchment paper with the help of a rolling pin keeping a thickness of just under 1/2 inch.

  • Cut out our cookies with the help of cookie cutters you might have at home, if not, you can use a glass or shape them with the help of a knife blade.

  • Place the cookies on a baking sheet lined with parchment paper and bake in a static oven at 350°F for a maximum of 14 minutes, but always keep an eye on them as the cookies should never darken!

  • Now let our cookies cool, and in the meantime, we prepare the icing: in a bowl, place one of the egg whites left over from the cookie preparation, add 4 drops of lemon juice, and start whisking.

  • Add, while continuing to whisk, all the powdered sugar and continue to beat until we obtain a smooth and shiny glaze without lumps.

  • Transfer the glaze into a piping bag and decorate our cookies as we like. Once decorated, they need to rest a bit in the air, just long enough for the glaze to set, and then we can finally package them (if we want to gift them) or enjoy them with our loved ones!

An extra tip:

* If you want, you can add food coloring to your icing after dividing it into small bowls based on the number of colors you want to create.
