I love it, even though I have to admit I rarely make it… The other night my daughter Arianna asked me to prepare it because she had this huge craving 😀 and how could I say no? It was late, and to speed things up, I decided to cook it in the air fryer, and what can I say… the result was amazing! Ingredients for a pasta frittata for 4 people

  • 12.35 oz spaghetti (or bucatini)
  • 1 tbsp extra virgin olive oil
  • 2.82 oz ham (cubed)
  • 1.41 oz black olives (pitted)
  • 4 tbsps grated Parmesan cheese
  • 2.82 oz scamorza cheese
  • 4 eggs

Preparation of the pasta frittata in air fryer

The preparation of this pasta frittata is very quick, so I recommend you to start boiling lightly salted water in which we will cook the pasta, meanwhile, we focus on preparing the seasoning.

  • In a small pan, brown the ham in a tablespoon of oil, let it just golden, then add the olives rinsed from their brine and cut into rings.

  • Let them brown for a couple of minutes, then turn off the heat and in the meantime cook the pasta for less time than indicated on the package, I usually remove about 2/3 minutes from the total time.

  • While the pasta is cooking, break the eggs into a bowl, beat them with grated Parmesan, add the freshly browned ham and olives, and diced scamorza, drain the pasta al dente and mix it with this seasoning.

  • Line a baking dish with parchment paper, then pour in the pasta and bake in our air fryer for about 15 minutes at 356°F. The indicated times were optimal for my air fryer model (the one in the link) I still recommend checking during cooking because times may vary slightly!

An extra tip:

* You can replace the olives with peas sautéed in a pan with oil and onion;

* Instead of scamorza, any melting cheese or well-drained mozzarella will work;

* If there are any leftovers, you can store the pasta frittata in the refrigerator, wrapped in foil, for up to two days;
